Flourless Chocolate Chickpea Brownies

Serves: 16 (1 brownie each)     Prep time: 20 min.     Cooking Time: 28 min.
CONTAINER EQUIVALENTS (per serving)         1

  • Nonstick cooking spray 
  • 1 (15-oz.) can chickpeas (garbanzo beans), drained, rinsed 
  • 1/4 cup organic grass-fed butter, melted (or extra-virgin organic coconut oil)
  • 2 large eggs 
  • 1/2 cup pure maple syrup (or raw honey)
  • 2 tsp. pure vanilla extract                  
  • 1/3 cup  organic unsweetened cocoa powder 
  • 1/2 tsp. baking powder, gluten-free
  • 1 pinch sea salt (or Himalayan salt)
  • 1/4 cup  semi-sweet (or dark) chocolate chips

1. Preheat oven to 350 degrees F.
2. Line 9 x 9-inch baking pan with parchment paper. Lightly coat with spray. Set aside.
3. Place chickpeas, butter, eggs,maple syrup, extract, cocoa powder, baking powder, and      salt in blender (or food processor); cover. Blend until smooth. 
4. Add chocolate chips; mix by hand until blended. 
5. Evenly spread batter into prepared pan.
6. Bake for 25 to 28 minutes , or until a toothpick inserted into the center of brownies comes  out  clean.
7. Cut into squares.

You can also use an 8 x 8-inch pan to bake brownies. They will be a little thicker.
You can substitute cannellini beans for garbanzo beans. They make a smoother brownie.


*update: top them with walnuts!!! OMG sooo good!!!

Delicious!!! you guys are going to love them... The kids can't stop eating them and I'm here like, sure have them... chocolate chip cookies, healthy, why not! They are Gluten free, paleo, so no worries there. Of course they still have calories so enjoy in moderation but they are a really nice treat.  The coconut oil gives them a sweet coconutty taste.  yum! 

Serves: 26 (1 cookie each)  Prep Time: 20 min.    Cooking Time:16 min.
CONTAINER EQUIVALENTS (per serving)        1 1/2 

3 cups                 almond flour

1 tsp                   baking flour, gluten-free 

1/4 tsp                sea salt (or Himalayan salt)

1/4 cup               extra virgin organic coconut oil, melted
                    
1/4 cup               pure maple syrup (or raw honey)
                           
1                         large egg

2                         large egg whites (1/4 cup)

1/2 cup               semi-sweet (or dark)
                           chocolate chips

1. Preheat oven to 375  F.
2. Line two baking sheets with parchment paper. Set aside.
3. Combine almond flour, baking soda, and salt in a medium bowl;mix well.Set aside.
4. Beat oil and maple syrup in a large mixer bowl until creamy, approximately 4 to 5 minutes. 
5. Add eggs, egg whites, and extract; beat for an additional two minutes.
6. Add almond flour mixture to egg mixture; mix until blended.
7. Add chocolate chips; mix until just blended.
8. Drop by rounded Tbsp. onto prepared baking sheet. Flatten cookies with a spatula if traditional cookie appearance is desired. Bake for 14 to 16 minutes, or until golden brown.
9. Store in an airtight container.

Tips:
  • You can make your own almond flour by processing 1 cup of silvered almonds in a food processor (or blender with a strong motor). Make sure that you pulse in 20-second intervals to prevent the almonds from turning into almond butter. 1 cup of silvered almonds yields approximately 1 cup of almond flour.
  • If you cannot find almond flour in your store, you can look at club stores or online.

First day of our new chapter...


It's so hard to let go. I am guilty of being too attached to my babies. I've been blessed with the opportunity to be with them since the day I became a mom the first time 12 years ago. Now that I have three babies, one returning back to school to start her first full year of school here in Florida in 7th grade and another one, my little man, my prince, starting his first full year of school in Kindergarten, I feel sad. I miss them already and I just dropped them off. 
On a day where so many parents are ready to throw a party, I should feel happy but the truth is it is hard to let go. I'm sad.  I'm happy to know that I've done my best as their mommy to prepare them for this day but dang it, it is so hard to let go!!! 

Held it in so that he wouldn't see me crying but my stomach is in knots, my heart is sad and my eyes can't hold the tears. 

I know it's going to get better. I know they will have happy stories later today. I pray that God continues to bless their school years just as he has done so far.  Always great teachers, great school buddies and parents that soon will become friends....

I am sad to see this chapter close for my baby boy but I know it will be a success.
He is now a big boy. I guess that's the part that hurts, that he is no longer my baby. And for my daughter is going to be a challenging year, all advanced classes, but I know this is an honor for her and she is excited about this challenge and I will continue to be here for them to help them have a kick ass school year.  In the mean time, keeping my little man at home entertained, letting him be and making these next couple of years enriching for him so that when it's his turn to start school he will also be ready for his new adventures. 

We'll be fine moms! Today you are in my thoughts as well! We did a great job! Now it's their turn to thrive and be the little awesome people we have raised them to be. 

I need a tissue. Lots of changes for me as well.....

Cilantro Lime Brown Rice

  • 1 tablespoon olive oil
  • 2 cups brown rice
  • 3 1/2 cups water
  • 1 teaspoon himalayan sea salt or regular sea salt
  • Juice and zest of one lime
  • 1/2 cup cilantro, remove the thicker part of the stalks and set aside, mince the leaves and the thinner stalks

Instructions
- In a saucepan, heat olive oil over medium heat. Add rice and stir to coat.
- Add in water, salt, lime juice and lime zest and the thick stalks of the cilantro. Bring to a boil, reduce heat, cover and simmer for 30-35 minutes, or until liquid is absorbed.
- Remove from heat and let rest for 10 minutes. Fluff rice with a fork, then stir in the chopped cilantro. 

To follow the 21 day fix meal plan, measure the portion in the yellow container and enjoy! 

Store any leftovers in the refrigerator for 3-4 days.  you can also freeze the individual portions in ziplock bags and reheat before serving.

Peanut Butter Shakeology cups

Guilt free, delicious treats....

You will need: 
  • Water
  • Chocolate Shakeology  (www.shakeology.com/paulachavez)
  • Peanut Butter (organic unsalted  is best). You can also use any nut butter you want to add variety in your treats.
  • A bowl
  • A 1/2 tablespoon
  • A spoon
  • Cupcake pan and paper cups

1. Place 1 cupcake cups in the pan. makes 4 so you only need 4 for the amount of ingredients here. 
2. Place Chocolate Shakeology in the bowl. One full pack or 1 full scoop.
3. Add water until you have a wet pudding mixture. You want it a little runny, not as thick as pudding. You want to be able to pour it into the cupcake cups. You really can’t add too much water. 
4. Mix the 2 ingredients well.
5. Take 1 spoonful of the chocolate Shakeology mixture you just made and scoop into each of the 4 cupcake holders. Use the spoon to spread out the mixture to cover the bottom of the cup. Put the remaining Shakeology mixture aside for later.
6. Mix your natural peanut butter well, and take 1/2 tbsp of peanut butter and scoop into each cup on top of the chocolate. Push it around to cover the chocolate as best as possible. This is your inner filling. Don’t use more then a 1/2 tbsp. because, all 4 Peanut Butter Cups will then equal 1 serving. (1 pack of Shakeology = 1 serving and 2 tbsp. of peanut butter = 1 serving size, so perfect combo.) 
7. Take the remaining Shakeology mixture and add one spoonful to each cupcake cup. Spread out over the peanut butter.
8. Place tray in freezer for about an hour and a half to be nice and frozen.
9. Remove and enjoy! Remember, all 4 peanut butter cups can be eaten at one time to equal one healthy serving of Shakeology and peanut butter. I personally like to spread them out over the day and enjoy! I also like when they are nice and frozen.

Sometimes you have to be your own Coach



Speak to yourself with affirmations! Tell yourself things that lift you up, not down....
Instead of saying I can't do this.... Say I will do this. 
Instead of saying I'm so tired. Tell yourself I'm not tired. Lace up. Get started and if 5 minutes go by and you are still not in the mood, then you know you are really tired and it's a rest day. But at least try. 
Instead of saying I am an emotional eater, I can't live without my sweets, I can't like without my wine....
Embrace change. Embrace the sacrifices that are going to create new habits in you and will get you to the life you want to live. 

Speak positivity into your life. Your body and mind believe what you say to yourself. Be your own cheerleader. You so got this!!!!

Are you riding the fitness change train and feeling a little disappointed?

Please, give yourself a pat in the back!!! hello, you are at least riding the train.... do you even realize how many wish they were and they're are just too lazy to take charge of their own health.... you are the bomb! keep going.... and keep these in mind...
  • It takes more than a week to gain weight, it's going to take way more than a week to lose it.  Be patient. 
  • Progress is happening wether you see it every day or not... if you are being consistent, changes are happening.. and results are guaranteed.  
  • If you are feeling a little desperate... don't allow sweets and junk food be the comforting solution to your frustration... it's only going to make things worse. have some herbal tea and go to sleep. 
  • Don't look for special pills, wraps or miracles. HARD WORK and CONSISTENCY is the ONLY WAY TO REACH YOUR GOAL! 
  • Just like you didn't gain more fat every day, you will not notice it going away every day, but it doesn't mean you're not getting fitter!
  • Feel PROUD of yourself every day.  every effort you are making, every sacrifice should be celebrated. Recognize how awesome you are. 
  • Now this one is huge....... Stop  letting the scale steal your joy!! that sucker!!!  Don't weigh in every week! You gain muscle, you gain water in your muscles and it masks fat loss.  instead judge by the clothing size, measuring tapes and how you feel.

Don't expect to do everything perfect or right all the time.  Some things will work for you, some won't. Be curious about how the body works, how the body performs better, how to eat and fuel your body right..... do your homework, experiment and change the plan as many times as you need it, but never the goal!

Eat like you Love yourself!

Hey! hope you are having a fabulous day!  I've been thinking a lot about ways to help my challengers who struggle with the eating part the most..... there's a few things i can do and it's to give you more resources and also encourage you to try your best to start educating yourself, learning, reading books, watching documentaries, and experimenting.  I personally found it fascinating to learn about how my body worked more efficiently.  It truly became my passion and it is something i want to dedicate more time to, once i have more time when the kiddos all go to school.


In the mean time, I am still educating myself, studying and learning.... and most importantly... trying new things.... right now I am following a meal plan very similar to those who are preparing for a competition, without going to extremes because well, I am not competing any time soon, not yet, maybe one day....


But a few things I wanted to share with you when it comes to Nutrition…


  1. Eat like you <3 yourself
  2. If you don’t have it, you won’t eat
  3. Eat for Nutrition not taste
  4. Aim at 80/20 (healthy/pleasure)
  5. Dont skip meals (especially breakfast)
  6. Food is not the enemy
  7. Food is the fuel your body needs to function at it’s best
  8. Had a setback, move on, don’t use it as excuse to continue off track
  9. If it’s time for a cheat/treat meal, plan for it, enjoy it, don’t feel guilty about it
  10. Give yourself time, it’s a process, change doesn’t happen overnight


And please, don’t ever see this as punishment, this is an opportunity to feel good, live better and enjoy a life of wellness.  Enjoy the journey!

Opportunity shows up in so many different ways

For some reason some days i feel more enthusiastic than others, and some days more thankful for the amazing changes in our life..... blessed with so much!!! 
Things have changed for us so much in the past few years... for the better. We went through very stressful times in our lives a few years ago. 
So much work, so much to do, so much running around, a slave of my job, as a Realtor, managing a real estate office, 30 houses listed,  under contract, agents with their issues, working 7 days of the week up at 5am to be ready before my daughter woke up. Running around without proper eating all day long, running on Coffee and crackers, picking her up from school to take her to drive thru, grab chicken nuggets and fries and back to the office.  Daddy would pick her up, do homework, order pizza or chinese, feed her and bathe her, put her to bed,  and me not going back home until the night hours because it was one thing after the other...
.
It was just go go go go. My daughter was growing so fast and I wasn't present. I wasn't the one cooking their meals, I wasn't there to do the homework with her...I was under lots of pressure and stress and on top of that, the mind game and uncertainty of the real estate market at that point. Foreclosures and short sales galore.

I got sick! Stress, chest pains, excess weight gain, high cholesterol.... I felt so miserable but I didn't know better. I thought that's what life in this country was supposed to look like.
Then I had my second child, my baby boy, and I decided to leave everything behind because I needed to be MOM first. And in being mom I gained even more weight. Ended up at 220lbs, non pregnant. That's what I thought being a stay at home was supposed to be. Watch tv all day, wear big t-shirts and sweatpants, skip meals and then eat whatever cause the baby needs you, binge eat at night to catch up with the meals not eaten early. Big mistake.
.
And then Beachbody came to my life..... It was a long journey of sweat and changing eating habits... but most importantly, it's been a journey of finding myself, finding a passion for something I never knew I had... I get to help others while I myself stay on track.... My journey inspires others and i share with them my enthusiasm and little tips here and there that I've learned along the way and that have worked for me.  Impacted our family's health, no doubt about that, specially because high risk diseases run in our families.... 
.
Our finances have changed! our situation changed completely, we were able to say yes to the opportunity that came about to move to Florida, some of you know how much i wanted to move here! Man there is no better feeling than the peace of being able to pay for things cash, not add to the credit card debt,  lower credit debt, purchase school supplies, new clothes and shoes for my minions with peace of mind, not having to worry about how we are going to pay for it.  I work hard, Im not going to lie, but i get to do it on my terms and at my pace.... and with the amazing support of a team that shares the same excitement for life... the friends I've made, the places I've been to, the events I've attended, the personal growth and the fulfillment knowing that i am influencing hundreds of people in a positive way with my own story and mentorship is priceless.

When I share with you my excitement and enthusiasm, my passion about having more people join me is because I know this could be what you have been looking for all your life. It was for me. It is my own business, my escape from the routine, my passion, my source of income, our family fun funds and savings, our freedom in the making.
.
Have you ever wondered if there is something else better out there for you? have you thought about pursuing it? I would love to share more about my business opportunity with you because, just as it was offered to me and at first i wasn't sure about it, it ended up being the biggest blessing I could have received at a moment where everything else was failing.
