Look, I'm not going to lie. I'm human! The smell of fresh bagels kills me! It's so powerful and weakens me. Sometimes it is stronger than me but I know better now. I know that a bagel, worth about 500 calories at least, is not really that tasty compared to my 200-300 calorie snack I'm having right now. QUINOA! What is it? How do I eat it?

Quinoa is a nutritious, whole grain that can be used as a delicious side dish, pilaf or stuffing.  It blends perfectly well with salads, soups and stews.

It's Gluten Free, has a low glycemic index and provides all of the eight essential amino acids, creating a complete protein.  (Vegans best friend)


Quinoa is an ancient traditional grain grown at 12,000 feet above sea level.  It's classified by the National Academy of Sciences as one of the best sources of protein in the vegetable kingdom. 


Basic cooking instructions:

Rinse it very well until no bubbles form and water runs clear. 
Combine half cup Quinoa with 1 cup water or broth in a pot or rice cooker (I use rice cooker). Turn heat on low, cover and cook for 15 minutes.  Let cool for 5 minutes and fluff with fork and serve. 
Quinoa is cooked when each grain looks translucent and white germ is visible. Store cooked quinoa in tight container in refrigerator for 3-5 days.  no longer  yuk!

Now you can eat it as if it was rice, or sauté some garlic and veggies like zucchini, peppers and onions, and place on top of Quinoa (eat it hot). Warm up and place two eggs on top, splash of Sriracha, boom!! Breakfast of champs!


For salads, get creative! Here are some combination ideas. Let the cooked Quinoa cool first, then refrigerate.


Mix with chickpeas, chopped cucumbers, chopped tomatoes, chopped red onions, chopped black olives and season with olive oil, lime juice, salt, oregano, thyme and pepper.  Throw in some small pieces of feta cheese.  Opa!!

Mix with chopped green apple, cranberries, toasted almond slivers or walnuts, and shredded lettuce. season with olive oil, lime juice, few drops of agave.

You can add about a 1/4 cup of plain quinoa to any salad you would normally eat.  get creative and share your concoction with us.

You can also try these, both recipes from the T25 meal plan.  5 ingredients, less than 25 minutes to prepare.

Quinoa Patties

3/4 cup cooked Quinoa
1/2 medium red bell pepper, finely chopped
4 tsp flaxseed
1 large egg white
Sea salt and pepper to taste

Combine all ingredients and mix well.   Form two balls and press firmly with hands until they turn into patties.


Spray non stick skillet with nonstick cooking spray.  Place patties on skillet and cook for 2 minutes on each side.  Remove from skillet and enjoy with a green salad.


Sweet Potato & Quinoa Salad

Water
1/2 medium sweet potato, peeled, diced
1/2 cup cooked quinoa
1/4 medium red bell pepper, diced
1 Tbsp chopped raw cashews.
Olive oil, lime juice, agave, salt and pepper to taste.

Steam sweet potato chunks for 5-7 minutes, until tender. Let cool.

Combine all ingredients and toss gently. 

Serve cold or warm.



How about a Breakfast Quinoa recipe that will get you on the right track for the rest of the day??? This one is taken from the P90X2 meal plan.


Breakfast Quinoa


1 cup Almond milk or skim milk

1 cup water
1 cup quinoa rinsed thoroughly
2 cups fresh berries
1 tsp vanilla
1 tsp ground cinnamon
1/4 cup chopped nuts
4 tsp honey or agave or maple syrup

Combine milk, water and quinoa in medium saucepan.  Bring to boil over high heat.

Reduce heat to medium low, cover and simmer for 15 minutes or until most liquid is absorbed.  Turn off heat and let stand covered for 5 minutes.
Stir in berries, vanilla, and cinnamon.  Serve to 4 bowls and top with nuts.
Drizzle 1 teaspoon of sweetener over each serving.

How I went from being 220lb unhappy mommy to fit coach and healthadvocate?

Looking back at the last 3 years or so , I've had a lot of fun and rather exciting things happen, of course not all is great and joyful, but for the most part, it has been an awesome journey so far. Check it out:

This picture represent so much. I don't know if you guys would understand, I hope so, and I also hope it inspires you to look beyond what you think you are and dream big.

When I first saw this picture I couldn't believe it. The amazing makeover Macys and the American Heart Association arranged for us, hair, make up, fashion week attendance, exclusive dresses, red carpet, interviews, videos, pictures, total royal treatment. It was beyond anything I could have imagined. And this has been an unforgettable experience. 

This picture represents that and much, much more. Look past the makeup and the hair and the amazing dress, and all that, It's about coming full circle to what I started 3 years ago, it's mine, it's my work, my sweat, my sacrifice, my journey. No one did this for me, no one could have worked out for me, no one could say eat this kale and not that chocolate bar, no one could wake up and say you have to workout today, no one BUT ME! 

This is the product of my effort and I feel so proud and I wish I could encapsulate this feeling and mass produce into a little pill, so you could all drink it and see how amazing it feels. 

I didn't give up and I don't want you to give up. I'm no different than you. I'm a mom, a wife, I have tons of things to do, I get tired, I get sick, my family gets sick, I get cranky, I get lazy, I am not special. 

I want you to get to wherever it is you want to get with your health and fitness and realize that you too can be an enhanced version of yourself. Maybe you are happy with the way things are going for you regarding health, fitness, confidence, your lifestyle, you decide what your happy is but I can assure you there's a stronger, healthier, energetic person inside you that you have yet to discover. To the woman and child who sat at table 9

At times being a mommy can be so overwhelming. It is stressful and throw Winter snowstorms and tons of things to do and it seems chaotic.  I just came across this blog post and I wanted to share it with you!  Love the closing sentence.... check it out.

I did not introduce myself to you. My name is Tony Posnanski. I have been a restaurant manager for fifteen years now. My day consists of making sure my restaurant runs well. That could mean washing dishes, cooking and sometimes even serving tables. I have also dealt with every guest complaint you can imagine.
A few weeks back you came into my restaurant. I was very busy that night. I was running around helping the kitchen cook food. I was asked to talk to a table close to yours. I did and they said your child was being very loud. I heard some yelling while I was talking to that table. I heard a very loud beep from a young girl.
I started to walk to your table. You knew what I was going to ask. You saw the table I just spoke to pointing at you. I got to your table and you looked at me. You wanted the first word. You said…
 
“Do you know what it is like to have a child with Autism?”
 
You were not rude when you asked the question. In fact, you were quite sincere. Your daughter could not have been more than five years old. She was beautiful and looked scared that I was at the table. She looked like she thought she was in trouble.
In fifteen years I do not have a lot of memorable moments as a restaurant manager. I remember some guests who were mad that their burger was not the way they wanted it. I remember a woman who called corporate on me because she said I gave her a regular Coke instead of a Diet Coke. I remember having to cut people off from drinking alcohol and I remember having to tell tables to have their child be quieter.
However, I do remember everything about the day my son was born. How I cried when I heard him cry. How I stood there and told him I would do anything for him and be the best father possible. I remember the day I married my wife. How I cried and promised to be the best husband possible. I remember the day my daughter was born. I did not cry that day. I was just so relieved because I lost a child two years earlier.
I know what I was supposed to say when I went to your table. I was supposed to politely tell you to please not have your daughter yell. I was supposed to offer to move you to another area. I was supposed to offend you by not offending you…
I did not do any of that.
 
Instead I just told you I hoped your meal was awesome. I high fived your daughter and then I told you that your meal was on us tonight. It was only sixteen dollars. It meant more to me than that. I do not think the other guests I spoke to were happy about it. At that moment it did not matter to me.
 
I do not know how you reacted. I had to leave to go cook because the kitchen was not doing very good that night. When the server asked me why I bought the food I just said you did not enjoy your steak. I did not tell anyone what you said to me. I was thankful you did say it to me though.
 
You asked me a question that I did not answer. The truth is I do not know what it is like to have a child with Autism. I know what it is like to be a father. I know what it is like to be a husband. I know what it is like to not tell his wife how much he loves her enough. I know what it is like to want to spend more time with his children.
 
You asked me the question right away. You have been through this before in other restaurants. I did not want to be like other managers for one moment. I did not want to tell you what you always heard.
 
Honestly, I wrote this to you and your beautiful daughter because I wanted to thank you both.
You have given me a great restaurant memory. One that I needed for the last fifteen years.
 
You also taught me a valuable lesson…
Sometimes doing the right thing does not make everyone happy; just the people who need it the most.
