Healthy Quinoa Stuffing

I am so making this for Thanksgiving. This simple stuffing is loaded with sweet apples and cranberries and topped with pine nuts. It tastes great warm or cold. I would just eat this at any time of year. Yummy!

Total Time: 42 min.
Prep Time: 10 min.
Cooking Time: 27 min.
Yield: 16 servings, ⅔ cup each
2 Tbsp. olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
8 medium celery stalks, chopped (about 4 cups)
2 medium green apples, with peel (about 2 cups)
4 cups low-sodium organic vegetable broth
2 cups dry quinoa, rinsed
1 tsp. sea salt
1 tsp. ground cumin
½ tsp. ground black pepper
½ cup dried cranberries
½ cup chopped fresh cilantro
½ cup pine nuts
1.Heat oil in medium saucepan over medium-high heat.
2. Add onion and garlic; cook, stirring occasionally, for 2 minutes, or until fragrant.
3. Add celery and apple; cook, stirring frequently, for 8 to 10 minutes, or until tender.
4. Add broth, quinoa, salt, cumin, and pepper. Bring to a boil. Reduce heat to medium-low; cook, covered, for 15 minutes, or until most of liquid is absorbed. Remove from heat.
5. Add cranberries. Cover and let stand for 5 minutes.
6. Add cilantro and pine nuts; fluff with fork and serve.

Raspberry Protein powered snack!

You know those moments when you start craving something sweet and your first thought is.... Where is that Energy bar, or the protein bar.  
I am a believer in real food! I do like bars but for Those times when i'm out and about and you just don't have anything else at hand.
I don't eat bars on a daily basis.  

This little recipe here is the solution to your problems. Super healthy, super fitness and figure friendly!! Greek yogurt and Raspberries should be in your fridge at all times. 
Check out this article from Fitness magazine on the benefits of eating yogurt. Or just take my word for it. Believe me, you will benefit from it.

3/4 cup plain greek low fat yogurt 
1/2 banana 
1/2 cup raspberries
1 tsp agave nectar to sweeten
1 Tbsp crushed or slivered almonds  
Sprinkle with cinnamon 

Super easy to put together. Filling, healthy and packed with good fuel! 
You could even have this at night when the late snack cravings attack, but NO BANANA! Only w berries.

It is hard. I know this. I've been there. I was heavy! 220lbs. It was hard! Losing 80lbs wasn't easy, maintaining the weight isn't easy, but man it is worth every effort and every drop of sweat! 

I didn't just wake up one day loving burpees πŸ˜…and push ups and feeling out of breathe. My heart was burning, my legs were itchy, I was nauseous. 😩😫 As a matter of fact I hated these feelings so much, but I wanted to be better. 

I didn't just lose the weight in a week or a month. It took weeks and weeks of trying and failing and celebrating and eating and feeling guilty but moving on. 
I didn't want to give up! I knew that giving up felt horrible. I wanted to know what not giving up would feel like. I focused every day on doing better than the day before, I wasn't expecting to be Chalene or Shaun T, I just wanted to be me, just a little better, just a little stronger. 

Still today, I don't aim at perfection, I aim at doing better than the day before. 
Still today I need motivation, and inspiration, not because I don't think it's worth the effort, but because there is so much I have to do, I feel tired many many times. 

Don't give up so easily! You have to stay strong and do a little better every day. That's all I ask from you. I say this in my classes every time, don't get frustrated because you can't keep up and go as fast as me or as high as me.... You do you!! You give it your best! 
Today Be better than you were yesterday! Tomorrow try to do better than you did today. 
The scale doesn't know this. It doesn't define your effort. You know this. You know the effort. 

Think about it! What if you don't give up! What if you keep pushing play! What if you are stronger and you don't just know it yet? What if you give it another chance? 

Your feeling of accomplishment and being proud of yourself is what matters. Not the number on the scale!!!

Read these tips, then print and post them so you have them as a daily reminder.

  • Look at exercise as a pleasure and a privilege, not a burden or chore. Think positively about the changes regular exercise will produce. Rather than obsessing about your next meal, get excited about your next workout!
  • Focus on short-term fitness goals with an emphasis on completing daily exercise.
  • Work to take your exercise to new levels of intensity.
  • Make it your goal to do some form of exercise 6 or 7 days a week. If some days you exercise once in the morning and once in the evening, even better! If you're eating right, exercise will fuel your energy level!
  • Create an exercise schedule the day before instead of leaving it to chance or waiting to "find" the time. If the last three Presidents of the United States can make time to work out every day, you can make time too!
  • Enjoy contributing to the health of others by having a partner or friends to exercise with, as well as recruiting others who want to feel better and have more energy. Have a neighbor who's sitting on the porch every morning when you walk by? Ask him or her to join you on your walk!
  • Avoid monotony by taking up new forms of exercising, or using things that keep you motivated and inspired, like new shoes or great music.
  • Invest in the right tools—good shoes, a portable MP3 player or iPod®, fitness equipment, a new series of tapes, etc.
  • Subscribe to fitness magazines to keep focused on health as an overall way of life.
  • Eat well-balanced meals and remember that excess calories, even if they're from food that's fat free and high in protein, will turn to excess weight. No matter what the latest fad diet says, extra calories equal extra weight!
  • Limit caffeine and exposure to even secondhand smoke.
  • Keep a water bottle with you at all times and drink from it often. Water should always be your drink of choice. To kick things up every once in a while, try adding lemon, lime, cucumber, or a few berries to liven up the flavor without adding significant calories.
  • Stick with eating plans you can maintain indefinitely. Remember that no matter how hard you're working out, if you're consuming too many calories, you'll never see the muscles that lie beneath layers of fatty tissue.
  • Keep a daily log of what you're actually eating. This includes every time you grab a handful of chips here or eat the crust of your kid's sandwich there, and ALL of your snacking.
  • Enjoy an occasional (once a week) "unhealthy" treat, but never an unhealthy week or unhealthy vacation.
  • If your diet is unbalanced, take daily vitamin and mineral supplements for total health.
  • Don't compare your body to others'. Instead, work to be your personal best.
  • Move beyond the boundaries of weight loss and into total fitness. Measure success by the way your clothes fit, not some number on a scale.
  • Get adequate amounts of sleep, but remember that people who exercise regularly fall asleep faster and sleep more soundly.
  • Limit alcohol intake to special occasions.


The one thing that I have learned along the way is that your body will get better results if you make 80% of your focus on your nutrition!
But lets face it, that is the hardest part! It's easier to workout than it is to eat healthy.

Well it turns out I had it all wrong in my younger years.  I used to go to the gym, back in my school years, late teens, and spend 3 hours at the gym.  5 am Spin class, folllowed by 6am front row cardio class, followed by an hour of weight training with a trainer.  All these with nothing in my stomach but coffee after coffee, complimentary at the gym.  
Turns out, the majority of fit people don't spend hours upon hours in the gym or live on a diet of water, coffee and air. It's actually the opposite.  They have a simple training routine, specific meal plan, and reliable ways to stay motivated and stick with it.
So what do they do that you can do too??:

1. Track your workouts. People who keep track of their workout sessions are 4 times more likely to be successful at reaching their fitness goals, according to’s research.  From a Fitbit to Myfitnesspal to paper and pencil, there's tons of ways to get it done.  The more crosses you see on that calendar, the more accountable you remain.
