7 LAYER DIP

This is amazing!!! lighter version of the popular seven-layer dip, that is heavy on fresh veggies, and uses nonfat refried beans and low-fat yogurt instead of sour cream. 
Total Time: 25 min.
Prep Time: 10 min
Cooking Time: 15 min.
Yield: 10 servings

Ingredients:
2 medium ripe avocados
2 Tbsp. fresh lime juice
1 dash sea salt (or Himalayan salt)
1 dash ground black pepper
8 oz low-fat plain Greek yogurt
2 tsp. all-natural taco seasoning, no salt added
1 (15-oz) can nonfat refried beans, warm
4 medium tomatoes, chopped
1 yellow pepper, chopped
1 bunch green onions, ends trimmed, sliced thin
2 Tbsp. shredded cheddar (or pepper jack) cheese (½ oz)
Preparation:
1. Mash avocados in a medium bowl.
2. Add lime juice, salt, and pepper; mix well. Set aside.
3. Combine yogurt and taco seasoning in a medium bowl; mix well. Set aside.
4. Top serving platter with beans, avocado mixture, yogurt mixture, tomatoes, peppers, green onions, and cheese.
5. Serve with baked tortilla chips, carrot stick and cucumber slices. delicious.

Every Day Salad


Every Day Salad
Looking for a great way to incorporate a salad into your “Every Day” without feeling like you’re eating the same thing over and over? Don’t get stuck in SALAD RUT! I’ve got some great tips and I promise it will be filling AND clean!
TIPS:
* Lunchtime is a great time to eat an Every Day salad. You can adjust it so it’s not the same daily! 
* Some items you buy for an Every Day salad can last days or weeks…which makes it a great consistent meal you can have daily, but change up the taste!
* Whether you work in an office or work at home you keep the “materials” you need in one spot! You can use Sunday as a “prep” day to get things ready for your salad. Grocery shop, hard-boil eggs, bake or cook chicken, wash and cut up veggies, separate foods into containers and portion out sizes!
* Summer/Farmer’s Market-time is an AWESOME time to make salads for lunch, but really it can be done ALL YEAR LONG!
* Some Salad basics? Some good greens (romaine or leaf are good options NOT head lettuce), cucumbers or zucchini and tomato are great starters to build off of, but really, ANYTHING GOES!
Here are some ideas for salad fillers. There are SO many more ideas here, but I wanted to give you some ideas of how to build a great salad that can be changed up daily:

VEGGIES: Beets, kale, carrots, mushrooms, hot peppers, green onions, cabbage, cauliflower, spinach, broccoli, corn
PROTEIN: Tuna, chicken, eggs, ground turkey, turkey bacon, steak, shrimp, salmon, quinoa, marinated tofu 
DAIRY: Feta, fresh mozzarella, cut up string cheese, cheddar cheese, gorgonzola cheese, cottage cheese
BEANS: Garbanzo beans, black beans, kidney beans
HEALTHY FATS: Sesame seeds, pumpkin seeds, almonds, olives, avocado, almonds, cashew
FRUIT: Mango, strawberries, blueberries
*You will want to use a “clean” dressing on this. I personally prefer lemon or red wine vinegar alone and sometimes add a touch of mustard, some people like hot sauce, but I know that can be hard for some people to stomach, so here is a great simple dressing recipe:

Red Wine Vinaigrette 
½ Cup Red Wine Vinegar
¼ Cup Olive Oil
1 Clove Garlic
Sea Salt/Pepper

EATING HEALTHY ON A BUDGET

Wouldn't it be nice if food grew on trees and we didn't have to pay for it? just grab and go.
Well, since that is not possible, I want to share with you some tips and my favorite fit budget friendly picks.  
  • Lean ground chicken, turkey, beef
  • Canned tuna
  • Eggs
  • Cottage cheese
  • Potatoes 
  • Brown rice
  • Oats
  • Romaine lettuce
  • Cucumbers,
  • Zuchinni
  • Broccoli
  • Bananas 
  • Frozen fruts and vegetables
  • Beans, lentils
  • Peanuts
  • Peanut butter (you can even make your own at home with roasted peanuts, put in blender and patiently wait for it to turn creamy.  no need to add any liquid, they will release their own fat and create that creamy texture)
  • Whole grain breads and pastas

That's pretty much what I eat on a regular basis and I recommend you stick with these as well, of course there is room for variety but make this list your staple every time you go food shopping. 

Plan your meals, repeating some of the same during the day will help you save prepping time and also allows you to buy in bulk, saving some money of course. 

Stay away from bars, frozen prepackaged meals, you end up paying more because you are paying for the processing and packaging. 

When it comes to fresh produce, buy in season, they'll be more nutritious, fresh, and of course cheaper.

Take advantage of sales, store brands and coupons.  

Of course you could be eating salmon, almonds, quest bars, and fancy steak but the reality is we want to keep ourselves healthy and fit and save our pennies to enjoy a happy life!

BEEF STEW LOW CARB, FIT FRIENDLY {21 day fix}

I am so addicted to this stew!!! it is so good and easy to make. It's made with butternut squash, instead of potatoes so it is low carb... perfection! specially for those night where you feel like having some comfort food.  anyway, you have to give it a try... let me know your thoughts.

 INGREDIENTS
  • 1 tsp olive oil
  • 1.5 lbs lean, boneless, stew meat - cut into 2 inch cubes
  • 1 medium onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red (or other colored) bell pepper, chopped
  • 4 cloves of garlic, crushed
  • 2 medium tomatoes, chopped
  • 1 cup low-sodium organic beef broth
  • 1 bay leaf
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 2 cups butternut squash, cubed
  • 1/4 cup fresh flat leaf parsley, chopped (optional for garnish) or a tablespoon of dry parsley if you don't happen to have fresh one handy.

    Heat oil in a large saucepan over a medium-high heat.
    Add beef; cook, stirring frequently, for 4-5 minutes, or until beef is brown.


    Add onion and peppers; cook stirring frequently for 4-5 minutes, or until onion is translucent.
    Add garlic; cook, stirring frequently for 1 minute.
    Add tomatoes, broth, bay leaf, salt and pepper. Bring to a boil. 
    Reduce heat to medium-low; cook, covered for 40 minutes.
    Add squash; cook stirring occasionally, for 8-12 minutes or until sauce has thickened and beef is fork tender.

    Remove bay leaf; serve topped with parsley.

    Serve 1 and 1/2 green container but count as 1 red and 1 green.  yields 4 servings. it's delicious.  serve with a green of broccoli or other vegetables for a perfect dinner and save for leftovers for lunch the next day!

    Cottage Cheese with Berries and seeds

    This is one of my favorite snacks lately.  so good!! The seeds add just the perfect crunch that I love. Yummy.
    And goes perfect with any berries by the way. 

    It's filling, tastes delicious, super easy to take with you on the go!!

    3/4 cups of cottage cheese (1 red)
    1 cup sliced strawberries (1 purple)
    2 Tbsp of roasted unsalted sunflower seeds (1 orange) 
    Sprinkle Cinnamon on top
