Rice Cakes

Rice cakes are amazing guys! Brown rice ones With no flavor are of course better. These are the ones I've tried. I love them with hummus on top for something salty, or guacamole and a few drops of Sriracha. 
They r also great with peanut butter or any nut butter and topped with banana or berries or even a berry jam. Delicious.  
Top them with turkey and cheese like an open sandwich, or tuna salad..... Or just plain. They are just delicious. My kids eat them plain. It's a clean healthy crunchy treat. Yummy yummy. 

Road Trip Stash

Summer is here and this is a time where lots of opportunities to go away on short and long getaways come up. The good thing is we don't have to blow all the hard work and throw it all out the window. If we plan right and prepare ourselves we can stay on track and still enjoy good turns and good eats. You'll go back home with no regrets and feeling amazing. 

We are on the road for the next 9 hours 😳🙄 but packed some snacks and Shakeo scoops in snack bags to have available for the next couple of days. Brought a couple extra just in case. This is not just for me though 😝 it's for the 5 of us.

This time I didn't make any but sometimes I'll also boil eggs and pack them peeled in a container I get at the dollar store and I don't mind discarding. Another great one is turkey or peanut butter sandwiches. 

We'll have lunch on the road somewhere half way. I'll be searching for a place where we can find veggies or salad with grilled chicken. 

I have some nice dresses to wear so I want to stay on track and feel good.

Creamy Chicken Salad with Honey Mustard Dressing

CREAMY CHICKEN SALAD 

3 cups chopped rotisserie chicken breast, boneless, skinless 
1/2 cup chopped green apple 
1/2 cup seedless grapes, cut in half
1/3 cup sliced raw almonds
2 green onions, sliced
2 Tbsp. Chopped Tarragon 
1/4 Honey Mustard salad dressing 
8 cups shredded romaine lettuce 


HONEY MUSTARD DRESSING 

1/2 cup reduced fat 2% low fat plain Greek yogurt
3 Tbsp  Dijon mustard  
3 Tbsp raw honey 
3 Tbsp rice vinegar
1/4 extra olive oil 
Sea salt 

Combine yogurt, mustard, honey and vinegar in a medium bowl, mix well.

Slowly add oil, whisking constantly until well blended, season with Sea Salt as desired.
